Cowboy Coffee Post: Brewing Community One Cup at a Time

When GoBrolly first opened its doors in 2014, coffee enthusiasts in the area had few options for finding a truly great cup of coffee.

That began to change when Michele Honeyman and her family moved to Louisburg, Kansas, in 2020. Michele wanted to connect with her new community, meet her neighbors, and create a space that brought people together. After 21 years of teaching, she often joked that one day she just wanted to “sell coffee.” In 2021, she turned that dream into reality. Combining her passion for coffee and community, Michele purchased the Cowboy Coffee Post trailer from an acquaintance and officially began her next chapter.

At first, Michele and her team set up in the parking lot of the Family Center in Paola, Kansas. Her commitment to serving high-quality coffee quickly paid off as Cowboy Coffee Post became known for its delicious hot and iced coffee, as well as its flavorful hot teas. The team began traveling to local events like the Miami County Fair and the Louisburg Cider Festival, and soon expanded their offerings to include snacks such as muffins and Michele’s handmade protein balls; a customer favorite.

In June 2024, Cowboy Coffee Post found its permanent home in a street-front building in Louisburg. The new location features a drive-through and a cozy outdoor seating area. With the move came an expanded menu that now includes a variety of breakfast and snack items; from breakfast burritos to locally roasted decaf coffee from Brew and Brews. They’ve also opened a second location inside Queen’s Price Chopper in Paola, in addition to keeping their traveling trailer.

So, what makes Cowboy Coffee Post so special? Michele credits their success partly to the quality of their coffee, beans sourced from a Kansas-based roaster, and then ground fresh every week or two for peak flavor. But she’s quick to highlight her staff as the heart of the business. Each team member lives locally in the Louisburg or Paola area, and most joined through word-of-mouth connections — a true reflection of the community spirit that defines the brand.
